The cookie version retains some of its most characteristic elements: a buttery dough, ground nuts, spices and fruit preserve visible through a small opening in the top cookie.

For this interpretation, we give the classic recipe a refined presentation, using star-shaped cutters and raspberry preserve to create a beautiful visual effect. A delicate dusting of powdered sugar completes the look and gives these cookies their unmistakable pastry-shop appearance.

Ingredients

For the Butter Cookie Dough

  • 250 g all-purpose flour
  • 150 g unsalted butter, softened
  • 90 g powdered sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 pinch of salt
  • 60 g ground almonds
  • Finely grated zest of ½ lemon

For the Filling

  • 150 g raspberry jam
  • 1 teaspoon lemon juice

You may also use strawberry, apricot or mixed-berry preserves.

To Finish

  • Powdered sugar, as needed
  • A few drops of rose water, optional
  • Freeze-dried raspberries, finely crushed, optional

Preparation

1. Prepare the Dough

In a large bowl, beat the softened butter with the powdered sugar until smooth, pale and creamy.

There is no need to incorporate too much air. The goal is to create a delicate pastry dough rather than an overly aerated mixture.

Add the egg, vanilla extract and lemon zest. Mix until fully incorporated.

Add the ground almonds and salt.

Finally, sift in the flour and gently mix until a uniform dough forms.

Avoid overworking the dough. The less it is handled, the more delicate and tender the finished cookies will be.

2. Chill the Dough

Shape the dough into a flat disc and wrap it in plastic wrap.

Refrigerate for at least 1 hour.

This resting time allows the butter to firm up and makes the dough easier to roll while helping the cookies retain their shape during baking.

3. Roll and Cut the Cookies

Preheat the oven to 170°C / 340°F, using conventional top and bottom heat.

Place the dough between two sheets of parchment paper and roll it out to approximately 3–4 mm thick.

Cut out the cookies using a star-shaped cutter or another shape of your choice.

For each finished Linzer cookie, you will need two pieces:

  • One solid cookie base.
  • One top cookie with a small star-shaped opening in the center.

Arrange the cookies on a baking tray lined with parchment paper.

4. Bake

Bake for approximately 8–12 minutes, depending on the size and thickness of the cookies.

They should be lightly golden around the edges while remaining pale in the center.

Do not overbake them. A perfect Linzer cookie should be delicate and lightly crisp rather than dry.

Remove from the oven and allow the cookies to cool completely on a wire rack.

5. Prepare the Raspberry Filling

Place the raspberry jam in a small saucepan and warm it gently.

Add a few drops of lemon juice to balance the sweetness and enhance the natural flavor of the fruit.

Stir until the jam becomes slightly more fluid.

For an especially refined finish, you can strain the jam through a fine sieve to remove the seeds.

Allow the filling to cool slightly before assembling the cookies.

6. Assemble the Linzer Cookies

Place the solid cookie bases on a clean work surface.

Add a small amount of raspberry preserve to the center of each cookie.

Do not use too much filling. The right amount will allow the raspberry preserve to remain visible through the opening without overflowing at the sides.

Carefully place the second cookie on top, with the small star-shaped opening.

Press gently so the two layers adhere without breaking the delicate cookie.

7. The Pastry-Shop Finish

Before assembling the cookies, dust the top pieces with powdered sugar.

Then place them over the raspberry-filled bases.

This allows the powdered sugar to remain on the surface while the vibrant raspberry filling shines through the small central opening.

The contrast between the white powdered sugar and the deep red raspberry preserve is one of the defining visual characteristics of Linzer cookies.

The Secret to Perfect Linzer Cookies

The key is balance.

The dough should contain enough butter to create a delicate, aromatic texture while remaining firm enough to hold the shape of the stars during baking.
