- 300 g fresh salmon, skinless and boneless
- 1 large avocado

- 2 tablespoons sesame seeds
- 2 tablespoons extra virgin olive oil
- 1 lemon
- 1 tablespoon lemon juice
- Zest of ½ lemon
- 1 teaspoon honey
- 1 teaspoon mild mustard
- Fresh dill or parsley
- Salt
- Freshly ground black pepper
For the salmon marinade
- 2 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice
- Lemon zest
- 1 teaspoon mild mustard
- 1 teaspoon honey
- Fresh dill
- A pinch of salt
- Freshly ground black pepper
Preparation
1. Marinate the salmon
Cut the salmon into cubes of approximately 2–3 cm.
In a bowl, combine the extra virgin olive oil, lemon juice, lemon zest, mustard, honey, dill, salt and freshly ground black pepper.
Add the salmon cubes and gently toss until they are evenly coated with the marinade.
Cover the bowl and refrigerate for 20–30 minutes.
If you wish to serve the salmon raw, use salmon that is suitable for raw consumption and has been properly frozen beforehand according to current food-safety recommendations. For additional precaution, the salmon may be frozen for two days, thawed in the refrigerator the day before, and then marinated for up to 24 hours. Alternatively, you may lightly cook the salmon before adding it to the salad.
2. Toast the sesame seeds
Place the sesame seeds in a dry frying pan over medium heat.
Toast them for approximately 1–2 minutes, stirring continuously, until they become lightly golden and aromatic.
Remove them from the pan immediately to prevent them from continuing to toast.
3. Prepare the ingredients
Wash and thoroughly dry the lettuce leaves.
Drain the white asparagus and cut it into pieces of approximately 4–5 cm.
Wash the cherry tomatoes. You may halve them or leave them whole, depending on your preferred presentation and texture.
Dice the avocado and add a few drops of lemon juice to prevent excessive browning.
Roughly chop the walnuts, keeping some larger pieces to provide a pleasant crunchy texture.
4. Prepare the vinaigrette
In a small bowl, combine the extra virgin olive oil, lemon juice, honey, mustard, lemon zest, salt and freshly ground black pepper.
Whisk until the ingredients are well emulsified and the dressing has a smooth consistency.
5. Assemble the salad
Arrange the lettuce as the base of the dish.
Add the cherry tomatoes, white asparagus and avocado.
