Mushroom, Iberian Ham and Nut Stuffed Pork Loin.

Mushroom, Iberian Ham and Nut Stuffed Pork Loin.

A classic celebration dish transformed into a gourmet experience

This mushroom-stuffed pork loin is an elegant and comforting dish in which tender meat is transformed into a sophisticated culinary experience thanks to an aromatic filling, precise cooking and an intense, glossy sauce.

The pork loin is butterflied and filled with sautéed mushrooms, Iberian ham and toasted nuts, then carefully rolled and tied with kitchen twine to maintain its shape during cooking. It is first seared until beautifully golden and then finished with a rich red wine and beef-stock reduction.

The result is a juicy, beautifully presented meat roll with layers of flavor, a caramelized exterior and a silky sauce that pairs wonderfully with truffled mashed potatoes, glazed shallots or seasonal vegetables.

A Brief History

Stuffed pork loins and tenderloin roasts have long been part of European celebratory cooking, particularly for festive family meals and special occasions. The technique of stuffing, rolling and tying meat allows additional flavors and textures to be incorporated into the center while creating an elegant presentation when the meat is sliced.

This modern interpretation combines traditional cooking techniques with Mediterranean ingredients such as Iberian ham, mushrooms, rosemary, thyme and extra virgin olive oil, complemented by a sophisticated red wine reduction.

The Flavor Profile

This recipe is designed around a balance of complementary flavors and textures:

  • Pork: tender, juicy and deeply browned.
  • Mushrooms: earthy, aromatic and rich in umami.
  • Iberian ham: adds depth and delicate saltiness.
  • Nuts: provide a subtle toasted flavor and a pleasant crunch.
  • Red wine: brings acidity, complexity and depth to the sauce.
  • Rosemary and thyme: add Mediterranean character.
  • Butter: gives the sauce a silky texture and beautiful shine.

Ingredients

For the Stuffed Pork Loin

  • 1 pork loin, approximately 1¾–2¼ lb (800 g–1 kg), butterflied
  • 9 oz (250 g) mixed mushrooms
  • 3 oz (80 g) thinly sliced Iberian ham
  • 1½ oz (40 g) toasted walnuts or hazelnuts
  • 1 shallot
  • 2 garlic cloves
  • 1 tablespoon fresh parsley, finely chopped
  • 1 sprig fresh thyme
  • 1 sprig fresh rosemary
  • 2 tablespoons extra virgin olive oil
  • Salt
  • Freshly ground black pepper

For the Red Wine Sauce

  • 1 cup (250 ml) red wine
  • 1¼ cups (300 ml) good-quality beef stock
  • 1 shallot
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 1 teaspoon cold butter
  • 1 sprig thyme
  • Freshly ground black pepper

For the Truffled Mashed Potatoes

  • 1.1 lb (500 g) potatoes
  • 3 tablespoons (50 ml) heavy cream
  • 2 tablespoons (30 g) butter
  • 1 teaspoon truffle oil, optional
  • Salt
  • White pepper

For Garnishing

  • Small sautéed mushrooms
  • Toasted walnuts or hazelnuts
  • Baby greens or microgreens
  • Fresh rosemary or thyme
  • A few drops of extra virgin olive oil

Step-by-Step Instructions

1. Prepare the Mushroom Filling

Clean the mushrooms carefully and chop them into small pieces.

Finely chop the shallot and garlic.

Heat the olive oil in a skillet and sauté the shallot for several minutes until softened.

Add the garlic and cook briefly until fragrant. Add the mushrooms.

Cook over medium-high heat until the mushrooms have released and evaporated most of their moisture and begin to brown.

Season with thyme, parsley, black pepper and a small amount of salt.

Remove from the heat and allow the mixture to cool.

The filling should be relatively dry before being placed on the pork, as excess moisture can make rolling difficult and affect the final texture.

2. Prepare the Pork

Place the pork loin on a cutting board and carefully butterfly it.

If necessary, make additional lengthwise cuts to create a piece of meat with an even thickness.

Cover with plastic wrap and gently pound with a meat mallet to even out the thickness.

Season lightly with salt and freshly ground black pepper.

There is no need to use excessive salt because the Iberian ham will add plenty of flavor and seasoning.

3. Assemble the Filling

Arrange the slices of Iberian ham over the entire surface of the pork.

Spread the sautéed mushrooms evenly over the ham and finish with the chopped toasted walnuts or hazelnuts.

Leave a small border around the edges to make rolling easier.

The combination of tender pork, earthy mushrooms, savory ham and crunchy nuts creates a beautifully balanced filling.

4. Roll and Tie the Pork

Starting from one end, carefully roll the meat into a tight cylinder, gently pressing as you go so the filling remains compact.

Once rolled, tie the pork securely with kitchen twine, making several crosswise ties and, if necessary, one lengthwise tie.

The goal is to keep the roll firmly together throughout cooking.

This step is essential for achieving clean, elegant slices later.

5. Sear the Pork

Heat a large heavy-bottomed skillet or Dutch oven.

Add the olive oil and, once hot, place the pork roll in the pan.

Sear it on every side, including the ends.

Do not rush this step.

The exterior should develop a deep golden-brown crust, as this caramelization provides much of the dish’s flavor and complexity.

Remove the pork and set aside.

6. Build the Sauce Base

Using the same pan, add a finely chopped shallot.

Cook over medium heat until softened and lightly caramelized.

Add the thyme and pour in the red wine.

Using a wooden spoon, scrape the bottom of the pan to release all the caramelized meat juices.

Allow the wine to reduce to approximately one-third of its original volume.

7. Cook the Pork Roll

Add the beef stock and return the pork roll to the pan.

Cook gently over low heat, turning the roll occasionally, until it reaches the desired internal temperature.

For a perfectly juicy result, use an instant-read thermometer to monitor the internal temperature.

Once cooked, remove the pork from the pan and allow it to rest for 8–10 minutes before slicing.

Resting allows the juices to redistribute throughout the meat.

8. Finish the Sauce

Strain the sauce for a smooth, refined texture.

Return it to the heat and reduce until slightly thickened and glossy.

Add the honey and Dijon mustard.

Remove from the heat and whisk in the cold butter, gently swirling the pan until the sauce becomes silky and emulsified.

The finished sauce should be rich and balanced rather than overly sweet.

9. Prepare the Truffled Mashed Potatoes

Boil the potatoes until completely tender.

Drain well and pass them through a potato ricer or mash until smooth.

Add the butter and warm cream.

Mix gently until creamy and homogeneous.

Season with salt and white pepper.

For an extra gourmet touch, add a few drops of truffle oil.

Use it sparingly so that its aroma does not overpower the mushrooms and pork.

10. Slice and Plate

Carefully remove the kitchen twine.

Cut the pork roll into approximately ¾–1-inch (2–3 cm) thick medallions.

Place a generous spoonful of truffled mashed potatoes on each plate and arrange two or three pork medallions on top.

Drizzle the red wine reduction around the meat rather than completely covering the cut surface, allowing the beautiful filling to remain visible.

Finish with small sautéed mushrooms, toasted nuts, baby greens and fresh thyme.

Add a few drops of the red wine reduction around the plate.

The presentation should highlight the contrast between the golden-brown meat, dark mushroom filling and glossy sauce.

Gourmet Side Dishes

Truffled Mashed Potatoes

The ultimate creamy accompaniment. Its luxurious texture softens the intensity of the red wine reduction while allowing you to enjoy every drop of the sauce.

Glazed Shallots

Their natural sweetness pairs beautifully with the earthy mushrooms and savory Iberian ham.

Green Asparagus

Fresh, crisp and slightly bitter, asparagus provides a refreshing contrast to the richness of the pork.

Sautéed Mushrooms

A simple but highly complementary side dish. Use a selection of mushroom varieties to create greater depth of flavor and texture.

Celeriac Purée

A sophisticated alternative to mashed potatoes. Its subtle sweetness and earthy vegetable character pair particularly well with the red wine sauce.

Nutritional Benefits

Pork loin is an excellent source of high-quality protein, while also providing B vitamins and minerals such as phosphorus, zinc and selenium.

Mushrooms contribute fiber, B vitamins and antioxidant compounds while adding an intense umami flavor without making the dish excessively heavy.

Nuts provide unsaturated fats, vitamin E, magnesium and fiber, while extra virgin olive oil contributes the heart-healthy monounsaturated fats associated with the Mediterranean diet.

As with any gourmet recipe containing sauce, ham and nuts, the final calorie content will depend on portion sizes and the chosen side dishes.

The Chef’s Secret

The secret to this dish lies in controlling the moisture of the filling and the cooking temperature of the meat.

The mushrooms must be cooked long enough to remove excess moisture. The pork roll should be firmly tied so that it maintains its shape, and the meat should always be thoroughly seared before the liquid is added.

Finally, resting the meat is essential.

Never slice the pork immediately after cooking.

Allowing it to rest for several minutes helps redistribute the juices and makes it possible to achieve clean, juicy and beautifully defined medallions.

Wine Pairing

A medium-bodied red wine with good acidity and elegant tannins is an excellent match for this dish.

A Rioja, Ribera del Duero or Montsant can work beautifully, depending on the style you want to bring to the meal.

A red wine with moderate oak aging is also a good choice, as it can complement the meat without overpowering the delicate aroma of the mushrooms.

The Final Touch

Just before serving, add a few drops of the red wine reduction around the plate, a light sprinkle of flaky sea salt over the cut surface and a few fresh thyme leaves.

A small amount of finely chopped toasted hazelnuts can provide an additional layer of texture.

The result is an elegant dish based on a classic technique: a perfectly tied stuffed pork roll, an aromatic filling of mushrooms and Iberian ham, a glossy red wine reduction and a creamy, sophisticated side dish.

A recipe created for special occasions, festive dinners and celebrations—perfect for transforming a traditional cut of meat into a memorable gourmet experience.
