Ingredients

For the Semifreddo

  • 500 g fresh strawberries
  • 120 g sugar

  • 1 teaspoon vanilla extract
  • A pinch of salt

For the Strawberry Compote or Center

  • 250 g strawberries
  • 60 g sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch
  • 1 tablespoon water

For the Topping

  • 250 ml heavy whipping cream, very cold
  • 25 g powdered sugar
  • 1 teaspoon vanilla

For Decoration

  • Fresh whole strawberries
  • Small strawberries with their green leaves
  • A few fresh mint leaves, optional
  • A few drops of strawberry coulis
  • Powdered sugar, optional

Step-by-Step Preparation

1. Prepare the Strawberries

Wash the strawberries quickly under cold running water and dry them carefully.

Remove the stems and set aside a few small, perfectly shaped strawberries for the final decoration.

Cut the remaining strawberries into pieces.

Place the strawberries in a bowl with the 120 g of sugar and the two tablespoons of lemon juice.

Let them macerate for approximately 15–20 minutes.

This brief resting period allows the fruit to release some of its natural juices and intensifies its aroma.


2. Prepare the Strawberry Purée

Blend the macerated strawberries until you obtain a fine, smooth purée.

For an especially refined texture, pass the purée through a fine-mesh sieve to remove the seeds.

Reserve part of the purée for later use in the semifreddo.

The goal is to obtain an intensely flavored strawberry cream with a perfectly smooth texture.


3. Prepare the Strawberry Compote

To create the spectacular strawberry center revealed when the semifreddo is sliced, prepare a small compote.

Place the chopped strawberries in a saucepan together with the sugar and lemon juice.

Cook over medium heat for approximately 6–8 minutes.

The strawberries should begin to break down, while still retaining a few small pieces of fruit.

Dissolve the cornstarch in the tablespoon of cold water and add it to the saucepan.

Stir for approximately one minute, until the mixture becomes slightly thickened.

Remove from the heat and allow it to cool completely.

The compote should be thick and concentrated enough to form a clearly defined stripe inside the semifreddo.


4. Prepare the Egg Base

Separate the egg whites from the yolks.

Place the yolks in a heatproof bowl together with the 80 g of sugar.

Whisk until the mixture becomes pale and creamy.

Cook over a gentle bain-marie, whisking constantly, until the mixture thickens and becomes light and airy.

Do not allow the bowl to come into direct contact with the hot water.

Remove from the heat and continue whisking for a few minutes so that the mixture begins to cool.

Add the vanilla and mix.

This base gives the semifreddo an especially creamy and stable texture.


5. Incorporate the Strawberry

Gradually add the strawberry purée to the egg-yolk mixture.

Stir gently until you obtain a homogeneous, pale pink cream.

Taste and adjust the balance between sweetness and acidity.

The strawberry should remain the star of the dessert. If the fruit is particularly sweet, a few additional drops of lemon juice will help maintain the characteristic freshness of the dessert.


6. Whip the Cream

Place the very cold heavy cream in a large bowl.

Add the sugar and vanilla.

8. Prepare the Mold

Line an elongated rectangular mold with parchment paper or plastic wrap.

Allow the lining to extend slightly over the sides.

This will make unmolding considerably easier.

For a particularly elegant presentation, use a mold approximately 25–30 cm long.


9. Create the Layers

Pour approximately half of the semifreddo mixture into the mold.

Gently smooth the surface.

Place a lengthwise line of completely chilled strawberry compote down the center.

There is no need to extend it all the way to the edges. Ideally, leave a few centimeters of space around it so that the fruit center remains completely enclosed within the semifreddo.

Cover with the remaining strawberry cream.

Carefully smooth the surface.

For a more irregular, artisanal marbled effect, you can also add small spoonfuls of compote between the layers and gently swirl the mixture with the tip of a skewer.

Do not overmix.

The intention is to create a clearly visible contrast when the semifreddo is sliced.


10. Freeze the Semifreddo

Cover the mold and place it in the freezer.

Freeze for a minimum of 6 hours, although leaving it overnight is ideal.

A sufficiently long freezing time allows the semifreddo to reach the proper consistency and makes it easier to achieve clean slices.


11. Prepare the Whipped Cream Topping

Just before serving, whip the 250 ml of cream with the powdered sugar and vanilla.

It should be firm enough to hold its shape, while remaining creamy enough to spread or pipe with a pastry bag.

Keep refrigerated until ready to decorate.


12. Unmold

Remove the semifreddo from the freezer.

Take it out of the mold and carefully remove the parchment paper or plastic wrap.

If it is difficult to unmold, briefly run a cloth dampened with warm water around the outside of the mold.

Do not heat the container excessively.

The semifreddo should remain firm.

Place it on a vintage-style silver metal tray.


13. Decorate the Semifreddo

Cover the top with a thin layer of whipped cream.

There is no need to completely cover it with a thick layer.

A slightly irregular, artisanal finish adds greater elegance.

Arrange several fresh whole strawberries on top, preferably small and similar in size.

Keep some with their green leaves to provide a contrasting color.

Arrange the strawberries naturally, avoiding an overly symmetrical decoration.

Finish with small dots of strawberry coulis and a few fresh mint leaves.


14. Serve

For a clean cut, use a long knife that has been warmed in hot water and thoroughly dried.

Cut a generous portion.

The interior should clearly reveal the pale pink cream and the intense central stripe of strawberry compote.

Place the portion on a white plate.

Serve with several whole strawberries and a small dessert spoon.

To complete the presentation, add a few drops of strawberry coulis around the semifreddo and, if desired, a light dusting of powdered sugar.
