Ingredients

For the Whipped Cream
- 300 ml heavy whipping cream, very cold
- 40 g powdered sugar
- 1 teaspoon vanilla extract

- 150 g dark or milk chocolate
- 100 ml heavy cream
- 20 g butter
- 1 teaspoon vanilla extract, optional
For Decoration
- 40 g roasted unsalted pistachios
- Edible gold leaf or edible gold flakes
- Powdered sugar, optional
- Melted chocolate, optional
Preparation
1. Prepare the Puff Pastry
Preheat the oven to 200°C / 400°F.
Place the puff pastry on a work surface.
If necessary, gently roll it out to create an even thickness without pressing too hard and flattening the layers.
Cut the pastry into strips approximately 2 cm / ¾ inch wide.
The strips should be long enough to wrap around the molds several times.
2. Shape the Cream Horns
Lightly grease the metal molds.
Take one strip of puff pastry and wrap it around the mold, starting at the narrow end.
Slightly overlap each turn so there are no large gaps.
Do not wrap the pastry too tightly, as it needs room to expand during baking.
Repeat with the remaining strips.
3. Brush and Bake
Beat the egg together with the milk.
Place the pastry horns on a baking tray lined with parchment paper and lightly brush them with the egg mixture.
Sprinkle with a little sugar.
Bake for approximately 15–20 minutes, or until the pastry has puffed up and become deeply golden and crisp.
Remove from the oven and allow to cool for a few minutes.
4. Remove the Molds
While the pastry is still slightly warm, carefully remove the metal molds.
Gently twist the mold until the pastry releases.
Transfer the pastry horns to a wire rack and allow them to cool completely.
The horns must be completely cool before filling.

5. Whip the Cream
Pour the very cold heavy cream into a large bowl.
Begin whipping and gradually add the powdered sugar.
Add the vanilla and continue whipping until the cream is firm and smooth.
Do not over-whip.
Transfer the whipped cream to a piping bag and keep refrigerated until needed.
Make the Chocolate Cream
6. Prepare the Chocolate Filling
Chop the chocolate into small pieces and place it in a bowl.
Heat the cream until very hot, but do not allow it to boil vigorously.
Pour the hot cream over the chocolate.
Let it stand for about one minute.
Stir gently until smooth and glossy.
Add the butter and vanilla and mix until completely incorporated.
Allow the chocolate cream to cool until it reaches a thick, creamy consistency suitable for piping.
7. Prepare the Pistachios
Finely chop the roasted unsalted pistachios.
Do not grind them into a powder. Small irregular pieces provide a pleasant crunch and beautiful color.
Set aside for decoration.
8. Fill the Cream Horns
Transfer the chocolate cream to a piping bag.
Pipe the chocolate cream into part of each pastry horn.
Then add the whipped cream.
You can also use two piping bags and fill the horns from opposite ends to create an attractive two-tone filling.
Do not fill the horns too far in advance.
Fill them shortly before serving to preserve the crisp texture of the pastry.
9. Add the Pistachio
Spread a small amount of chocolate cream around one end of each horn.
Dip that edge into the chopped pistachios so they stick to the filling.
The green pistachio creates a beautiful contrast against the golden pastry.
10. Finish with Edible Gold
Add a few delicate pieces of edible gold leaf or edible gold flakes to the pastry horns.
You only need a very small amount.
