Preparation

1. Prepare the Shortcrust Pastry

Place the flour, icing sugar, and cold butter in a bowl. Work the mixture gently with your fingertips until it resembles fine breadcrumbs.

Add the egg, vanilla, salt, and lemon zest if using. Mix just until the dough comes together. Avoid overworking it, as this will help preserve its delicate, crumbly texture.

Shape the dough into a disc, wrap it, and refrigerate for 30–60 minutes.


2. Cut and Bake the Hearts

Preheat the oven to 170°C / 340°F.

Roll the chilled dough to approximately 3–4 mm thick on a lightly floured surface.

Cut out heart shapes using a cookie cutter and arrange them on a baking tray lined with parchment paper.

Bake for approximately 10–13 minutes, or until the edges are just lightly golden.

Allow the cookies to cool completely before filling.


3. Prepare the Coconut Cream

Beat the softened butter with the icing sugar until light and creamy.

Add the condensed milk gradually, followed by the vanilla extract.

Fold in the grated coconut and mix until you have a smooth, creamy filling.

If the mixture feels too firm, add 2–3 tablespoons of heavy cream, little by little, until you reach a soft piping consistency.


4. Assemble the Coconut Hearts

Transfer the coconut filling to a piping bag.

Pipe a generous layer onto half of the cooled heart-shaped cookies.

Cover with the remaining cookies, gently pressing them together so that the filling reaches the edges without spilling out.

You should have a beautiful sandwich-style heart with a delicate coconut center.


5. Add the Chocolate

Melt the dark chocolate gently using a double boiler or short intervals in the microwave.

For a smoother, more fluid coating, add the coconut oil and mix well.
