  • 80 g icing sugar.
  • 1 teaspoon vanilla extract.
  • 1 teaspoon powdered unflavoured gelatin.
  • 2 tablespoons water.

  • Pistachios, finely chopped.

Preparation

01 · Prepare the chocolate

The elegant outer shell

Melt the milk chocolate gently in a heatproof bowl over a bain-marie or in the microwave using short intervals.

Stir between each interval until the chocolate is completely smooth and glossy.

If using a microwave, avoid overheating the chocolate.

For a more intense flavour, you can replace the milk chocolate with dark chocolate. White chocolate can also be used for a sweeter and more delicate version.


02 · Create the chocolate shells

The structure of the bonbon

Use a 12-cavity star-shaped silicone chocolate mould.

Pour a small amount of melted chocolate into each cavity.

Move the mould gently so that the chocolate covers the base and sides evenly.

Turn the mould upside down over the bowl to allow any excess chocolate to drain away.

Scrape the surface clean with a spatula.

Place the mould in the refrigerator for several minutes until the chocolate has set.

For a stronger shell, repeat the process with a second thin layer of chocolate.

The chocolate shell should be firm enough to contain the cheesecake filling without breaking.


03 · Prepare the gelatin

The secret to a stable cheesecake filling

Place the powdered gelatin in a small bowl with the 2 tablespoons of water.

Leave it for a few minutes so that the gelatin absorbs the water and hydrates.

Gently warm the mixture until the gelatin has completely dissolved.

Do not boil it.

Set aside and allow it to cool slightly.


04 · Prepare the cheesecake cream

Smooth, creamy and delicate

Place the mascarpone cheese, whipping cream, icing sugar and vanilla extract in a large bowl.

Beat until you obtain a smooth and creamy mixture.

Do not overbeat.

Add the dissolved gelatin gradually while continuing to mix gently until it is completely incorporated.

The final cheesecake filling should be smooth, creamy and stable, with enough consistency to hold its shape inside the chocolate shells.


05 · Fill the chocolate bonbons

Remove the chocolate mould from the refrigerator.

Carefully fill each chocolate shell with the cheesecake mixture.

Leave a small amount of space at the top.

Do not overfill the cavities, as we need enough room to seal the bonbons with chocolate.

Smooth the surface gently with a small spatula.


06 · Seal with chocolate

A perfect chocolate finish

Cover the cheesecake filling with the remaining melted chocolate.

Spread it carefully so that each bonbon is completely sealed.

Use a spatula to remove any excess chocolate from the surface of the mould.

Return the mould to the refrigerator and allow the chocolate to set completely.

This usually takes approximately 30–60 minutes, depending on the temperature of the refrigerator and the thickness of the chocolate shell.


07 · Unmould the stars

Once the chocolate has completely hardened, gently remove each bonbon from the silicone mould.

Press the silicone carefully away from the chocolate rather than pulling the bonbon directly.

The result should be a collection of beautiful star-shaped chocolate bonbons with a creamy cheesecake centre.


08 · The pistachio finish

Finish the chocolate stars with a small amount of finely chopped pistachios.
