- 500 ml whole milk
- 4 egg yolks
- 100 g sugar
- 40 g cornstarch

- 25 g unsalted butter

How to Prepare the Cream Profiteroles
1. Prepare the Choux Pastry
Preheat your oven to 200°C / 390°F.
Place the water, milk, butter, sugar, and salt in a saucepan. Heat over medium heat until the butter has completely melted and the mixture begins to simmer.
Remove the saucepan from the heat and add the flour all at once.
Stir vigorously with a wooden spoon until you obtain a smooth and homogeneous dough.
Return the saucepan to low heat and continue stirring for 1–2 minutes. The dough should pull away from the sides of the saucepan and form a smooth, cohesive ball.
Transfer the dough to a bowl and allow it to cool slightly for a few minutes.
2. Add the Eggs
Add the eggs one at a time, mixing thoroughly after each addition.
The dough should become smooth and glossy, with enough consistency to hold its shape when piped.
Transfer the choux pastry to a piping bag fitted with a round nozzle.
3. Shape the Profiteroles
Line a baking tray with parchment paper.
Pipe small, evenly sized mounds of dough onto the tray, leaving enough space between them.
If small peaks remain on the surface, gently smooth them with a slightly damp fingertip.
4. Bake
Bake at 200°C / 390°F for approximately 15 minutes.
Then reduce the temperature to 180°C / 350°F and continue baking for another 15–20 minutes, until the profiteroles are beautifully golden and dry.
It is important not to open the oven during baking, as this may cause the profiteroles to collapse.
Once baked, turn off the oven, leave the door slightly open, and allow the profiteroles to rest for a few minutes so they can finish drying.
5. Prepare the Vanilla Pastry Cream
Heat the milk together with the vanilla until hot, but do not bring it to a boil.
In a separate bowl, whisk the egg yolks with the sugar and cornstarch until smooth and slightly pale.
Gradually pour the hot milk into the egg mixture while whisking continuously.
Return the mixture to the saucepan and cook over medium heat, stirring constantly, until the cream thickens and becomes silky and smooth.
Remove from the heat and incorporate the butter.
Transfer the cream to a bowl and cover the surface directly with plastic wrap to prevent a skin from forming.
Refrigerate until completely chilled.
6. Fill the Profiteroles
Once the choux pastry and pastry cream are completely cool, make a small opening underneath each profiterole.
Fill them generously with the vanilla pastry cream using a piping bag.
The filling should be abundant while remaining perfectly contained inside the pastry.
7. Final Presentation
Arrange the profiteroles on an elegant serving plate.
Finish with a delicate dusting of icing sugar.
For a more refined presentation, you may add a few fresh berries or small mint leaves.
The result is a delicate French dessert in which the light choux pastry and silky vanilla cream take center stage.
