Catalan Tomato Bread — Pa Amb Tomàquet.

A Traditional Catalan Recipe
Pa amb Tomàquet, or Catalan tomato bread, is one of the simplest and most iconic preparations in Catalan cuisine. It is made with just a few essential ingredients: good country bread, ripe tomato, salt and extra virgin olive oil.
Its simplicity is precisely what makes it so special. When the ingredients are of good quality, there is no need for complicated cooking techniques. The crisp texture of the bread, the freshness of the tomato and the aroma of the olive oil create a perfectly balanced Mediterranean combination.
This traditional preparation is enjoyed throughout Catalonia in homes, restaurants and family gatherings. It can be served for breakfast, as an appetiser, alongside cured meats and cheese, or as an accompaniment to meat and fish.
History and Tradition
Pa amb Tomàquet is closely connected to traditional Catalan home cooking and the Mediterranean habit of making the most of simple, seasonal ingredients.
The preparation also became a practical way of using bread that was no longer completely fresh. Rubbing ripe tomato over the surface softened the bread while adding freshness and flavour.
Over time, this humble preparation became an important part of Catalan gastronomic identity.
The traditional method consists of rubbing a ripe tomato directly onto a slice of bread until the tomato pulp and juice are absorbed into the crumb. The bread is then seasoned with salt and finished with extra virgin olive oil.
In Catalonia, it is often served with traditional products such as jamón, fuet, llonganissa, botifarra and local cheeses. It can also accompany grilled meats, fish and other Mediterranean dishes.
Ingredients
Serves 4
- 4 large slices of country bread
- 2–3 very ripe tomatoes
- 3–4 tablespoons extra virgin olive oil
- Salt, to taste
Optional
- 1 garlic clove
Garlic is not essential, but it can be gently rubbed over the toasted bread before adding the tomato for a more pronounced flavour.
Method
1. Prepare the Bread
Cut the country bread into slices approximately 1.5–2 cm thick.
Lightly toast the bread on both sides using a grill, griddle or oven.
The surface should become golden and slightly crisp while the interior remains firm enough to absorb the tomato and olive oil.
2. Add the Garlic
If you are using garlic, cut the clove in half and gently rub it over the warm surface of the toasted bread.
Use only a small amount. The garlic should provide a subtle aromatic note without overpowering the tomato.
3. Prepare the Tomato
Wash the tomatoes and cut them in half.
Rub each tomato half directly over the surface of the bread, pressing gently so that the pulp and natural juices penetrate the crumb.
Continue until the entire surface is covered with tomato.
Very ripe tomatoes work particularly well because they release more juice and pulp.
4. Season with Salt
Sprinkle a small amount of salt over the tomato.
The salt should enhance the natural sweetness and acidity of the tomato without overpowering it.
5. Finish with Olive Oil
Drizzle generously with extra virgin olive oil.
Allow the oil to spread over the tomato and soak slightly into the bread.
Because olive oil is one of the principal ingredients in this recipe, use a good-quality extra virgin olive oil with a flavour you enjoy.
How to Serve It
Serve the tomato bread immediately after preparation, while the bread is still crisp.
For a traditional Catalan table, arrange the slices on a wooden board and serve them with cured meats, cheese, olives or other Mediterranean products.
Pa amb Tomàquet is particularly good with jamón, fuet, llonganissa or botifarra, but it can also be served alongside grilled meat or fish.
The Secrets of Good Pa Amb Tomàquet
Choose good country bread.
The bread should have a firm crumb and a crisp crust capable of absorbing the tomato without becoming completely soggy.
Use ripe tomatoes.
The tomato should be juicy, aromatic and sufficiently ripe to release its pulp easily.
Use good extra virgin olive oil.
Its flavour is clearly noticeable in the finished dish, so quality makes a significant difference.
Do not overdo the salt.
Its purpose is to enhance the tomato rather than dominate it.
Toast the bread lightly.
A crisp surface creates the ideal contrast with the juicy tomato.
Serve immediately.
The best texture comes from serving the bread while it still has a pleasant crispness.
