A Brief History of Greek Chicken Skewers

Skewered meat has been part of the culinary traditions of the eastern Mediterranean for centuries. In Greece, one of its best-known expressions is souvlaki, small pieces of meat threaded onto skewers and cooked over a grill.

Chicken is particularly well suited to this style of cooking because it readily absorbs the flavours of lemon, garlic, oregano and olive oil.

Yogurt-based accompaniments, cucumber, fresh herbs, olives and feta cheese further enhance the Mediterranean character of the dish, while couscous provides a light and aromatic base.

This recipe takes inspiration from that tradition and gives it a contemporary gourmet presentation, incorporating avocado, roasted red pepper, seeds and a creamy mint yogurt sauce.

Ingredients | Serves 4

For the Chicken

  • 1 kg boneless, skinless chicken breasts
  • 2 garlic cloves
  • Zest and juice of 1 lemon
  • 2 tablespoons fresh oregano
  • 1 teaspoon ground cumin
  • 2 teaspoons paprika
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons extra virgin olive oil
  • Salt
  • Freshly ground black pepper
  • Red pepper, cut into pieces

For the Mint Yogurt Sauce

  • 1 cup plain Greek yogurt
  • 1 garlic clove
  • 1 tablespoon fresh mint
  • Juice of ½ lemon or lime
  • 1 tablespoon extra virgin olive oil
  • Salt
  • Freshly ground black pepper

For the Garnish

  • 2 cups cooked couscous
  • 1 avocado
  • ½ cucumber
  • 1 roasted red pepper
  • 200 g feta cheese
  • A handful of olives
  • A handful of rocket
  • ½ cup fresh basil or parsley
  • Nuts and seeds, to taste
  • Extra virgin olive oil
  • Lemon wedges, for serving

Method

1. Marinate the Chicken

Cut the chicken breasts into evenly sized pieces to ensure they cook uniformly.

In a large bowl, combine the olive oil, balsamic vinegar, lemon juice and zest, minced garlic, oregano, cumin, paprika, salt and pepper.

Add the chicken and mix thoroughly until every piece is well coated.

Cover and refrigerate for 8–12 hours, preferably overnight.

The combination of citrus, oil and spices will allow the flavours to penetrate deeply into the chicken.

2. Prepare the Mint Yogurt Sauce

Place the Greek yogurt in a bowl.

Add the finely minced garlic, lemon juice, salt, pepper and a small drizzle of extra virgin olive oil.

Finely chop the fresh mint leaves and add them to the yogurt.

Mix until the sauce is creamy, fresh and completely combined.

Refrigerate until ready to serve.

Chef’s tip: Prepare the sauce slightly in advance. After resting for a while, the mint, lemon and garlic blend more harmoniously with the yogurt.

3. Prepare the Skewers

Remove the chicken from the marinade and thread the pieces onto wooden skewers that have been soaked in water beforehand.

Alternate the chicken with pieces of red pepper.

Heat a grill, griddle pan or barbecue over medium-high heat.

Cook the skewers, turning them regularly, until golden on the outside and completely cooked through.

The surface should develop small charred areas that add depth of flavour without becoming burnt.

4. Prepare the Accompaniments

Prepare the couscous according to the package instructions and allow it to cool slightly.

Slice the cucumber, avocado and roasted red pepper.

Crumble the feta cheese.

Arrange the couscous on a large serving platter or plate and add the vegetables, rocket, olives and feta.

Add the nuts and seeds for a pleasant crunchy contrast.

5. Assemble the Dish

Place the chicken skewers on one side of the plate.

On the opposite side, add a generous spoonful of the mint yogurt sauce.

Arrange the cucumber, avocado, roasted red pepper, olives and feta around the plate.

Finish with fresh mint or parsley leaves, freshly ground black pepper, a touch of spices and a delicate drizzle of extra virgin olive oil.

Serve with a lemon wedge so each guest can add a final citrus note just before eating.

The Secret to Truly Juicy Chicken Skewers

The key lies in the marinade and the size of the chicken pieces.

All the chicken pieces should be similar in size so that they cook evenly. Several hours of marinating allow the lemon, garlic, oregano and spices to flavour the surface of the meat.

However, the chicken should not remain indefinitely in a highly acidic marinade. Between 8 and 12 hours provides a good balance for this preparation.

During cooking, avoid constantly moving the skewers. Allow them enough time to develop a golden, lightly charred surface before turning them.

Finish with fresh herbs, freshly ground black pepper, seeds and a very fine drizzle of extra virgin olive oil.

A small lemon wedge completes the composition and allows a final touch of acidity just before serving.

The result should feel generous yet carefully composed, with different colours and textures clearly visible throughout the plate.

Storage & Serving

Cooked chicken can be stored in an airtight container in the refrigerator for 2–3 days.

The yogurt sauce should remain refrigerated and is best consumed within 1–2 days.

To serve, gently reheat the chicken in a frying pan or on a griddle, avoiding excessively high temperatures that could dry it out.

The fresh vegetables, avocado and rocket should be added just before serving to preserve their texture and freshness.
