- 1 onion, finely chopped.
- 1 leek, cleaned and chopped.
- 1 carrot, finely diced.
- 2 garlic cloves, sliced.
- 2 bay leaves.
- Saffron threads.
- Extra virgin olive oil.
- Salt.
- Water, as needed.
For the rosemary-infused oil
- 100 ml (3.4 fl oz) extra virgin olive oil.
- 1–2 fresh rosemary sprigs.
Optional: a small splash of brandy to intensify the sauce, a few drops of dry white wine, or a knob of cold butter for an even silkier finish.

Clean the monkfish and cut it into evenly sized pieces.
