These individual puff pastry squares with vanilla cream, blueberries and strawberries are elegant, delicate and eye-catching little pastries.

The puff pastry is transformed into small square pieces, golden, crisp and lightly caramelized, with the ends carefully twisted to create their distinctive knot-like finish. At the center, a smooth and silky vanilla cream is topped with blueberries and accompanied by freshly sliced strawberries.

Ingredients

Makes 6 individual pastries

For the puff pastry

  • 1 rectangular sheet of puff pastry, 100% butter Europastry.
  • 1 egg, for brushing.
  • 1 tablespoon sugar.
  • 1 tablespoon butter, for greasing the baking tray if needed.

For the vanilla cream

  • 300 ml whole milk.
  • 3 egg yolks.
  • 60 g sugar.
  • 25 g cornstarch.
  • 1 teaspoon vanilla extract.
  • 20 g unsalted butter.

For decorating

  • 100 g fresh blueberries.
  • 150 g fresh strawberries.
  • 1 tablespoon powdered sugar.

For the glossy finish

  • 2 tablespoons apricot jam.
  • 1 tablespoon water.

Preparation

01 · Prepare the vanilla cream

Smooth, aromatic and silky

Heat the milk together with the vanilla in a saucepan, making sure it does not come to a boil.

In a separate bowl, whisk the egg yolks, sugar and cornstarch until smooth and well combined.

Gradually pour the hot milk into the egg mixture, whisking constantly.

Return the mixture to the saucepan and cook over medium heat, stirring continuously with a whisk.

Once the cream has thickened and has a smooth, glossy texture, remove it from the heat.

Add the butter and stir until completely incorporated.

Cover the surface directly with plastic wrap and allow the cream to cool completely.


02 · Cut the puff pastry squares

The distinctive shape of these little pastries

Preheat the oven to 200°C / 400°F, with conventional top and bottom heat.

Place the puff pastry on a lightly floured surface and cut it into 6 equal squares.

To recreate the appearance shown in the photograph, make small cuts or folds at the ends of each piece and gently twist the two opposite ends, creating the characteristic knot-like shape.

The center should remain open and relatively flat, as this is where the vanilla cream will be placed later.

Arrange the pieces on a baking tray lined with parchment paper.


03 · Shape and bake

Crisp, golden and beautifully caramelized

Carefully brush each pastry with beaten egg.

Sprinkle a very light amount of sugar over the puff pastry.

Bake for approximately 15–20 minutes, until the pastry is well puffed and has a golden, glossy and lightly caramelized appearance.

Remove from the oven and allow the pastries to cool completely on a wire rack.

Important: Do not add the cream yet. The puff pastry must be completely cool to preserve its crisp texture.


04 · Prepare the strawberries

A fresh finishing touch

Wash and carefully dry the strawberries.

Remove the stems and cut them into thin, elongated slices.

To recreate the presentation shown in the photograph, select the most attractive slices and place them later beside the vanilla cream, rather than covering the entire pastry.

This keeps the puff pastry visible and creates a cleaner, more elegant presentation.


05 · Fill the pastry squares

The creamy center

Transfer the chilled vanilla cream to a piping bag fitted with a star-shaped nozzle.

Pipe a generous amount of cream into the center of each puff pastry square, making sure not to cover the twisted ends.

You can create a small row of rosettes or several decorative dots of cream for a more sophisticated finish.


06 · Add the blueberries and strawberries

The decoration that defines the pastry

Place several fresh blueberries directly on top of the vanilla cream, positioning some slightly higher to add height and dimension.

Next, arrange 2–3 strawberry slices beside the cream, resting them against one side of the puff pastry.


07 · The finishing touch

Glossy and bakery-style

Gently warm the apricot jam with one tablespoon of water.

Lightly brush the blueberries and strawberries with a small amount of the glaze.

Finish with a light dusting of powdered sugar, particularly over the golden twisted ends of the puff pastry.
