Ingredients

Serves 6 · approximately 600 g of mushrooms

For the Mushrooms

  • 600 g fresh mushrooms
  • 4 garlic cloves
  • 4 tablespoons extra virgin olive oil
  • A small bunch of fresh parsley
  • Salt
  • Freshly ground black pepper
  • 1 teaspoon lemon juice, optional

The mushrooms should be firm, fresh and similar in size to ensure even cooking.


Preparation

01 · Preparing the Mushrooms

Clean the mushrooms carefully.

Remove any remaining soil with a damp cloth or a soft brush.

Avoid soaking them in water for a long time, as they can absorb moisture and become more difficult to brown.

Trim the ends of the stems if necessary.

Small mushrooms can be left whole.

If the mushrooms are medium-sized or large, cut them into halves or quarters, making sure the pieces are relatively uniform in size.


The Garlic

02 · Preparing the Garlic

Peel the garlic cloves.

Slice them thinly or finely chop them, depending on the desired presentation.

For a more elegant version, finely chopped garlic is recommended so that it blends with the olive oil and lightly coats the mushrooms.

It should never be allowed to burn.


The Parsley

03 · Preparing the Parsley

Wash and dry the fresh parsley thoroughly.

Remove the thicker stems.

04 · Heating the Pan

Use a wide frying pan or shallow casserole.

When the mushrooms are almost fully browned, add the finely chopped garlic.

Sauté for approximately 1–2 minutes.
