A traditional recipe transformed into an elegant gourmet dish
Orange Chicken in a Casserole is an aromatic, succulent dish full of character. The combination of beautifully browned chicken, fresh orange and a glossy, slightly sweet sauce creates an elegant recipe that is perfect for a special meal.
The key is to achieve a deep golden color at the beginning and then slowly cook the chicken in a casserole, keeping the skin above the cooking liquid. This allows the meat to remain tender and juicy while the surface retains its beautiful golden finish and can finally be coated with a delicate orange glaze.
The result is a refined, aromatic dish with a silky sauce that makes every bite irresistible.
Ingredients
For the chicken
8 bone-in chicken thighs or drumsticks with skin
2 tablespoons extra virgin olive oil
1 large onion, finely chopped
3 garlic cloves
2 oranges
100 ml dry white wine
250 ml chicken stock
1 sprig rosemary
2 sprigs fresh thyme
1 bay leaf
Salt
Freshly ground black pepper
For the orange glaze
150 ml fresh orange juice
Finely grated zest of 1 orange
2 tablespoons honey
1 tablespoon Dijon mustard
1 teaspoon soy sauce
1 teaspoon butter
A pinch of freshly ground black pepper
For finishing
Thin orange slices
Fresh thyme
Finely chopped fresh parsley
Fresh orange zest
A few drops of extra virgin olive oil
Method
1. Prepare the chicken
Pat the chicken pieces completely dry with paper towels. This is essential for achieving a beautiful golden-brown skin.
Season generously with salt and freshly ground black pepper on both sides.
Set aside for a few minutes while preparing the remaining ingredients.
2. Brown the chicken
Heat a large, heavy-bottomed casserole over medium-high heat.
Add the olive oil and place the chicken pieces skin-side down.
Allow them to cook without moving them for several minutes, until the skin becomes deeply golden and evenly browned.
Turn the chicken pieces over and briefly brown the other side.
Remove the chicken from the casserole and set aside.
Do not rush this step. Proper browning develops the deep flavor that forms the foundation of the entire dish.
3. Prepare the aromatic base
Using the same casserole and the flavorful juices left from the chicken, add the chopped onion.
Cook over medium heat for 6–8 minutes, until soft and lightly golden.
Add the chopped garlic and cook for approximately one minute.
Add the rosemary, thyme and bay leaf.
4. Deglaze with white wine
Pour in the white wine and gently scrape the bottom of the casserole with a wooden spoon.
Allow the wine to reduce for approximately 3–4 minutes.
This step releases all the concentrated flavors from the bottom of the casserole and gives the sauce greater depth.
5. Add the orange and stock
Add the juice of one orange and the chicken stock.
Do not completely cover the chicken. The liquid should reach approximately one-quarter to one-third of the way up the chicken pieces.
This is important because the skin should remain above the liquid throughout the cooking process.
6. Slowly cook the chicken
Return the chicken to the casserole, skin-side up.
Cover with the lid slightly ajar and cook over low heat for approximately 40–50 minutes, depending on the size of the chicken pieces.
The cooking should be gentle, without a vigorous boil.
During this time, the meat will become tender while absorbing the flavors of the orange, herbs and aromatic base.
7. Prepare the orange glaze
While the chicken is cooking, prepare the glaze.
In a small bowl, combine the fresh orange juice, honey, Dijon mustard, soy sauce, orange zest and a pinch of black pepper.
Mix until completely smooth.
The combination of orange, honey, mustard and soy sauce creates a delicate balance between sweetness, acidity, saltiness and depth.
8. Reduce the sauce
When the chicken is almost completely cooked, remove the lid.
Increase the heat slightly and allow the sauce to reduce for several minutes.
For a particularly refined sauce, temporarily remove the chicken and reduce the sauce in the casserole until it becomes thicker and glossy.
Return the chicken to the casserole.
9. Glaze the chicken
Gradually add the orange, honey, mustard and soy mixture.
Using a spoon, baste the chicken pieces, concentrating the glaze mainly on the surface rather than flooding the skin.
Cook for another 5–10 minutes over medium-low heat while the sauce thickens and becomes glossy.
Add the butter and gently swirl the casserole to incorporate it into the sauce.
The butter gives the sauce a silky texture and a beautiful finish.
The goal is to achieve chicken that is golden, juicy and lightly caramelized, coated in a concentrated, glossy orange sauce.
10. Finish and serve
Arrange the chicken pieces on an elegant oval serving platter or serve directly in the casserole.
Place thin orange slices around the chicken and spoon some of the reduced sauce around the pieces.
Finish with fresh thyme, finely chopped parsley and a little fresh orange zest.
A few drops of extra virgin olive oil can be added just before serving for an elegant final touch.
For a refined presentation, arrange the chicken pieces slightly overlapping and allow the glossy orange sauce to form a beautiful base around them.
Gourmet Side Dishes
This orange chicken pairs particularly well with side dishes that complement and absorb the rich citrus sauce.
Truffle Mashed Potatoes
Creamy mashed potatoes with a delicate truffle aroma provide a luxurious contrast to the bright citrus notes of the chicken.
Glazed Baby Carrots
Cook baby carrots with butter, a little fresh orange juice and a touch of honey for a beautiful and harmonious accompaniment.
Rosemary Baby Potatoes
Golden baby potatoes cooked with olive oil, fresh rosemary and a touch of garlic provide a more Mediterranean-style pairing.
Basmati Rice
A refined and lighter option that allows the orange sauce to take center stage.
Seasonal Vegetables
Green asparagus, fine green beans or lightly sautéed seasonal vegetables add freshness and balance to the dish.
A Gourmet Combination
For an especially elegant presentation, serve the orange chicken with truffle mashed potatoes, glazed baby carrots and a generous spoonful of the reduced orange sauce.
The combination brings together creaminess, sweetness, acidity, Mediterranean aromas and contrasting textures.
The Secret to This Recipe
The real secret is controlling the amount of cooking liquid.
The chicken should never be completely submerged. First, it is deeply browned to develop flavor and color. It is then slowly cooked with a small amount of liquid, always keeping the skin facing upward.
Finally, the casserole is uncovered, the sauce is reduced and the orange glaze is added.
This technique creates the three essential elements of the dish:
tender chicken, golden skin and a glossy, concentrated sauce.
The Final Touch
Just before serving, add a little fresh orange zest over the chicken.
This simple detail intensifies the citrus aromas and adds freshness, balancing the sweetness of the glaze.
Serve piping hot with a creamy side dish and plenty of the rich orange sauce.

This is a delicate, thin pizza that combines the creaminess of avocado, the intense aroma of smoked salmon, and the fresh herbal character of arugula, all served on a light, crisp, fragrant artisan base. A dish that transforms a simple preparation into a fine dining experience.
Ingredients
1 medium gourmet pizza
For the artisan dough
200 g good-quality wheat flour.
120 ml lukewarm water (not hot).
1 teaspoon dry baker’s yeast.
1 tablespoon extra virgin olive oil.
½ teaspoon fine salt.
½ teaspoon sugar.
For the topping
120 salmon, gently torn by hand.
½ ripe avocado, cut into thin, even slices.
A handful of fresh arugula.
3–4 tablespoons cream cheese, ricotta, or crème fraîche.
Red onion, cut into very thin slivers.
Extra virgin olive oil.
Sea salt and freshly ground black pepper.
Optional: fresh dill, lemon zest, or a drizzle of floral honey.
Preparation
01 · Activating the yeast
The beginning of the aroma
In a small bowl, mix the lukewarm water with the sugar and yeast. Let it rest for 8–10 minutes, until a layer of foam forms on the surface.
This step ensures a lighter, airier dough.
02 · Gourmet dough
Perfect texture
Place the flour in a large bowl and mix with the salt. Make a well in the center and pour in the yeast mixture together with the olive oil.
Begin incorporating the ingredients with a spoon or your hands until you obtain a sticky dough. Transfer the dough to a lightly floured surface and knead for 8–10 minutes, until it becomes elastic, smooth, and homogeneous.
03 · First rise
Rest and magic
Form the dough into a ball, place it in a greased bowl, and cover it with a clean cloth.
Let it rest for 1 hour, or until it doubles in size.
This rising time is essential for achieving a thin yet characterful base.
04 · Shaping the base
Gently deflate the dough with your hands. Stretch it with a rolling pin or with your fingertips until you obtain a thin, even disc, ideal for a crisp and elegant finish.
Place the dough on a baking tray or pizza stone.
05 · Delicate pre-baking
Preheat the oven to 220 °C.
Spread a thin layer of cream cheese or crème fraîche over the surface of the dough, then gently arrange the avocado slices.
Add the salmon in irregular but harmonious pieces. Add the thinly sliced red onion and fresh arugula to provide volume and freshness.
Bake for 8–10 minutes, until the edges turn a soft golden brown.
07 · Final touch
The gourmet signature
Drizzle with extra virgin olive oil and season with a touch of freshly ground black pepper.
Optional, but highly recommended:
Lemon zest to enhance the aromas.
Dill for a fresh herbal fragrance.
A drizzle of floral honey for a sublime sweet-and-savory contrast.
