Ingredients

For the chicken

  • 8 bone-in chicken thighs or drumsticks with skin
  • 2 tablespoons extra virgin olive oil
  • 1 large onion, finely chopped
  • 3 garlic cloves
  • 2 oranges
  • 100 ml dry white wine
  • 250 ml chicken stock
  • 1 sprig rosemary
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • Salt
  • Freshly ground black pepper

For the orange glaze

  • 150 ml fresh orange juice
  • Finely grated zest of 1 orange
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1 teaspoon soy sauce
  • 1 teaspoon butter
  • A pinch of freshly ground black pepper

For finishing

  • Thin orange slices
  • Fresh thyme
  • Finely chopped fresh parsley
  • Fresh orange zest
  • A few drops of extra virgin olive oil

Method

1. Prepare the chicken

Pat the chicken pieces completely dry with paper towels. This is essential for achieving a beautiful golden-brown skin.

Season generously with salt and freshly ground black pepper on both sides.

Set aside for a few minutes while preparing the remaining ingredients.

2. Brown the chicken

Heat a large, heavy-bottomed casserole over medium-high heat.

Add the olive oil and place the chicken pieces skin-side down.

Allow them to cook without moving them for several minutes, until the skin becomes deeply golden and evenly browned.

Turn the chicken pieces over and briefly brown the other side.

Remove the chicken from the casserole and set aside.

Do not rush this step. Proper browning develops the deep flavor that forms the foundation of the entire dish.

3. Prepare the aromatic base

Using the same casserole and the flavorful juices left from the chicken, add the chopped onion.

Cook over medium heat for 6–8 minutes, until soft and lightly golden.

Add the chopped garlic and cook for approximately one minute.

Add the rosemary, thyme and bay leaf.

4. Deglaze with white wine

Pour in the white wine and gently scrape the bottom of the casserole with a wooden spoon.

Allow the wine to reduce for approximately 3–4 minutes.

This step releases all the concentrated flavors from the bottom of the casserole and gives the sauce greater depth.

5. Add the orange and stock

Add the juice of one orange and the chicken stock.

Do not completely cover the chicken. The liquid should reach approximately one-quarter to one-third of the way up the chicken pieces.

This is important because the skin should remain above the liquid throughout the cooking process.

6. Slowly cook the chicken

Return the chicken to the casserole, skin-side up.

Cover with the lid slightly ajar and cook over low heat for approximately 40–50 minutes, depending on the size of the chicken pieces.

The cooking should be gentle, without a vigorous boil.

During this time, the meat will become tender while absorbing the flavors of the orange, herbs and aromatic base.

7. Prepare the orange glaze

While the chicken is cooking, prepare the glaze.

In a small bowl, combine the fresh orange juice, honey, Dijon mustard, soy sauce, orange zest and a pinch of black pepper.

Mix until completely smooth.

The combination of orange, honey, mustard and soy sauce creates a delicate balance between sweetness, acidity, saltiness and depth.

8. Reduce the sauce

When the chicken is almost completely cooked, remove the lid.

Increase the heat slightly and allow the sauce to reduce for several minutes.

For a particularly refined sauce, temporarily remove the chicken and reduce the sauce in the casserole until it becomes thicker and glossy.

Return the chicken to the casserole.

9. Glaze the chicken

Gradually add the orange, honey, mustard and soy mixture.

Using a spoon, baste the chicken pieces, concentrating the glaze mainly on the surface rather than flooding the skin.

Cook for another 5–10 minutes over medium-low heat while the sauce thickens and becomes glossy.

Add the butter and gently swirl the casserole to incorporate it into the sauce.

The butter gives the sauce a silky texture and a beautiful finish.

The goal is to achieve chicken that is golden, juicy and lightly caramelized, coated in a concentrated, glossy orange sauce.

10. Finish and serve

Arrange the chicken pieces on an elegant oval serving platter or serve directly in the casserole.

Place thin orange slices around the chicken and spoon some of the reduced sauce around the pieces.

Finish with fresh thyme, finely chopped parsley and a little fresh orange zest.
