Ingredients

For the monkfish

  • 1 monkfish tail, cleaned, approximately 700–900 g.
  • 2 tablespoons extra virgin olive oil.
  • Coarse sea salt, to taste.
  • Freshly ground black pepper, to taste.
  • ½ fresh lemon.
  • Fresh parsley leaves.
  • A pinch of sweet or smoked paprika, optional.

For the vegetable bed

  • 150 g fresh green beans.
  • 1 red bell pepper.
  • 150 g cherry tomatoes.
  • 1 garlic clove.
  • 2 tablespoons extra virgin olive oil.
  • Sea salt.
  • Freshly ground black pepper.
  • Fresh thyme leaves.

For the green herb sauce

  • 1 small bunch fresh parsley.
  • 1 small garlic clove.
  • 60 ml extra virgin olive oil.
  • 1 teaspoon fresh lemon juice.
  • A pinch of salt.
  • Freshly ground black pepper.

Preparation

01 · Preparing the Monkfish

Carefully clean the monkfish tail, removing any remaining skin or tough membranes.

Open the tail butterfly-style, making a lengthwise cut so that the two sides remain connected.

Pat the fish thoroughly dry with kitchen paper.

This step is essential. The drier the surface, the better the final browning will be.

Lightly brush the monkfish with extra virgin olive oil and season with sea salt and freshly ground black pepper.

Set aside for a few minutes while preparing the vegetables.

02 · Preparing the Green Beans

Wash the green beans and trim the ends.

Cut them into small pieces or on the diagonal for a more elegant presentation.

Cook them briefly in salted boiling water until tender but still slightly firm.

03 · Sautéing the Vegetables

Slice the red pepper into thin strips.

Heat the extra virgin olive oil in a wide pan and add the finely chopped garlic.

Place the cherry tomatoes on a small baking tray.

Drizzle with a little extra virgin olive oil and season with salt, pepper and fresh thyme.

Roast at 190°C / 375°F for approximately 12–15 minutes, until they begin to wrinkle slightly and their natural juices become concentrated.

The tomatoes should remain juicy while developing lightly caramelized edges.

Set aside for plating.


The Green Herb Sauce

05 · The Aromatic Finish

Place the fresh parsley, garlic, extra virgin olive oil, lemon juice, salt and black pepper in a small food processor or blender.

Blend until you obtain a vibrant green sauce.

There is no need to make it completely smooth.

A slightly rustic texture allows the herbs to remain visible and gives the sauce a more natural, artisanal character.

Set aside.


Grilling the Monkfish

06 · The Secret Is in the Heat

Preheat the grill or barbecue until it reaches a high, stable temperature.

Make sure the grill grates are clean and lightly oiled to prevent the fish from sticking.

Place the monkfish skin-side down.

Cook for several minutes without constantly moving it.

Carefully turn the monkfish once the surface is nicely browned.

Continue cooking until the center is fully cooked while remaining moist and tender.

As a general guide, a tail of this size may require approximately 8–12 minutes in total.

Avoid overcooking.

The monkfish should remain firm, juicy and beautifully opaque inside.

07 · A Touch of Citrus

Remove the monkfish from the grill and allow it to rest for 2–3 minutes.

Add a few drops of fresh lemon juice just before serving.

Do not use too much.

The purpose is to add freshness and balance the intensity of the grilled fish without overpowering its natural flavor.

Choose a wide, neutral-colored plate to highlight the natural colors of the vegetables.

Begin by creating a bed of sautéed green beans and red pepper.
