- 2 tablespoons honey
- 1 tablespoon Dijon mustard
- 1 teaspoon soy sauce
- 1 teaspoon butter
- A pinch of freshly ground black pepper

- Thin orange slices
- Fresh thyme
- Finely chopped fresh parsley
- Fresh orange zest
- A few drops of extra virgin olive oil
Method
1. Prepare the chicken
Pat the chicken pieces completely dry with paper towels. This is essential for achieving a beautiful golden-brown skin.
Season generously with salt and freshly ground black pepper on both sides.
Set aside for a few minutes while preparing the remaining ingredients.
2. Brown the chicken
Heat a large, heavy-bottomed casserole over medium-high heat.

Return the chicken to the casserole, skin-side up.
Cover with the lid slightly ajar and cook over low heat for approximately 40–50 minutes, depending on the size of the chicken pieces.
The cooking should be gentle, without a vigorous boil.
During this time, the meat will become tender while absorbing the flavors of the orange, herbs and aromatic base.
7. Prepare the orange glaze
While the chicken is cooking, prepare the glaze.
In a small bowl, combine the fresh orange juice, honey, Dijon mustard, soy sauce, orange zest and a pinch of black pepper.
Mix until completely smooth.
