Preparation

2. Create the base
In a saucepan, whisk together the egg yolks, sugar and cornstarch until smooth and creamy.
Gradually add the orange juice while whisking continuously. Add the orange zest and a small pinch of salt.
3. Cook the citrus cream
Place the saucepan over medium-low heat and cook gently, stirring constantly with a whisk.
As the mixture warms, it will gradually thicken into a smooth, glossy cream. Do not allow it to boil vigorously; gentle cooking preserves the delicate texture and fresh citrus aroma.
When the cream has reached a custard-like consistency, remove it from the heat.
4. Add the finishing touches
Immediately incorporate the butter and vanilla extract. Stir until the butter has completely melted and the cream is perfectly smooth.
Transfer the citrus cream to a bowl and cover the surface directly with cling film to prevent a skin from forming.
Allow it to cool until completely chilled.
5. Fold in the whipped cream
