Premium Gourmet Spanish Tortilla

Serves 4–6

Ingredients

For the tortilla

  • 1 kg potatoes, preferably a floury or frying variety
  • 7–8 large eggs
  • 1 large onion, optional depending on your preferred style
  • 250–350 ml extra virgin olive oil
  • Fine salt, to taste

To finish

  • A few drops of extra virgin olive oil
  • Flaky sea salt, optional
  • Freshly ground black pepper, optional

Preparation

01 · Choose and Prepare the Potatoes

The foundation of a memorable tortilla

Peel the potatoes and cut them into thin slices or small, irregular pieces of a similar size.

There is no need to make them perfectly uniform.

The potato should retain some character after cooking.

Rinse them briefly if desired, then dry them thoroughly before adding them to the oil.

Season lightly with salt.


Slow-Cooking the Potatoes

02 · Cook Slowly in Olive Oil

Heat the extra virgin olive oil in a wide frying pan over medium heat.

Add the potatoes.

The key is to cook them slowly, rather than frying them at an excessively high temperature.

The potatoes should become:

tender + meltingly soft + lightly golden around some edges.

Stir occasionally with a spatula, taking care not to break them up too much.

Slow cooking allows the potatoes to develop a much creamier texture.


03 · Add the Onion

Slice the onion into thin strips.

You can add it to the potatoes from the beginning or introduce it a few minutes later.

Cook everything slowly until the onion becomes very tender, sweet and lightly caramelised.

We are not looking for crisp onion.

We want it to melt into the potato.

This adds sweetness and depth to the dish.


The Perfect Egg Consistency

04 · Beat the Eggs

Crack the eggs into a large bowl.

Add a pinch of salt.

Beat them gently without incorporating too much air.

The goal is not to create a foam, but a smooth mixture that will coat the potatoes perfectly.

For an especially creamy tortilla, avoid over-beating the eggs.


05 · Combine the Potatoes and Eggs

Remove the potatoes and onion from the oil using a slotted spoon.

Allow the excess oil to drain.

Immediately add the hot potato and onion mixture to the beaten eggs.

Mix gently.

Let the mixture rest for 3–5 minutes.

This short resting period allows the egg to penetrate between the layers of potato and creates a much more integrated texture.


The Decisive Moment

06 · Cook the Tortilla

Use a non-stick frying pan approximately 20–22 cm in diameter to create a tall tortilla.

Add a small amount of the oil used previously.

Heat over medium heat.

Pour in the potato, egg and onion mixture.

Carefully distribute the mixture to create an even surface.

Cook for approximately 2–4 minutes, depending on the thickness and the desired consistency.

During the first few seconds, gently move the pan to prevent the tortilla from sticking.

The exterior should begin to set while the centre remains succulent.


The Perfect Flip

07 · Turn the Tortilla

Place a large, completely flat plate over the frying pan.

With one quick and confident movement, turn the tortilla over.

Slide it back into the pan.

Use a spatula to gently push the edges inward, creating a perfectly round and elegant shape.

Cook for another 1–3 minutes.

The timing will depend on whether you prefer your tortilla:

very juicy + creamy,
meltingly soft + lightly set,
or completely cooked through.

The Golden Finish

08 · Achieve the Perfect Surface

During the final few seconds, you can slightly increase the heat to achieve a delicately golden surface.

The tortilla should have an exterior that is:

golden + even + lightly toasted + glossy.

Avoid burning it.

The goal is not a thick crust, but a fine golden layer that contrasts with the soft interior.


Resting

09 · Allow the Tortilla to Set

Remove the tortilla from the pan and place it on the serving plate.

Allow it to rest for approximately 5 minutes before cutting.

This short resting period allows the juices to redistribute and the tortilla to finish developing its structure.

The interior should remain juicy and creamy.

10 · Bringing the Tortilla to the Table

Use a wide ceramic plate in light or neutral tones to create contrast with the golden colour of the tortilla.

Place the whole tortilla in the centre.

For a contemporary presentation, finish with:

  • a few drops of extra virgin olive oil,
  • a few flakes of sea salt,
  • fresh herbs, optional.

Do not overload the plate.

The tortilla should remain the star.

Avoid excessive reheating, as the egg may become firm and lose some of its creamy texture.
